One of the biggest challenges I have when it comes to eating is the weekend. That’s when I would typically undo any good ground I may have gained during the week and blow calories on fast, “fun” foods like pizza, hot dogs, and burgers. So I decided that before I give into cravings, I’d get ahead of the game. I was prepared with substitutions.
Behold, the Plant Based Diet version of Burgers and Fries!
I like these green patties from Dr. Praeger’s. You can find them in the freezer section at Kroger’s or Whole Foods. For the fries, I went with Alexa’s Organic Sweet Potato fries. I garnished with some more veggies and opted for guacamole instead of ketchup. Boy, was it super good! I didn’t feel like I missed out on any fun foods this weekend. Mission accomplished!
I love trying out raw vegan recipes for sweet treats because I feel better eating them knowing there are no crazy chemicals and the ingredients are whole fruits, nuts, seeds, and vegetables.
I’ve always wanted to try a Raw Carrot Cake recipe and last weekend, I finally did! Here’s the recipe that I followed- http://skinnyfitalicious.com/raw-carrot-cake. And here is how it turned out:
It didn’t quite look like hers. I think next time, I’m going to add more dates than she recommended so that I can get more of a chewy texture. I am also going to take out the coconut flour because I think it kind of dried up some of the moisture from the dates.
Did it taste like my beloved Carrot Cake from Publix’s bakery? No. But it was a very yummy substitution. Also, it was very rich and heavy so I felt very satisfied when I ate it and I didn’t feel the need to keep nibbling on it (cake is usually so light, it’s so easy to keep on eating mindlessly). So my substitution definitely did its job!
Here I am in my office, having an afternoon pick me up with my favorite carrot juice recipe this week. I prepped three mason jars full of fresh juice the night before so I wouldn’t have any excuse the next day!
